So here's what it sounds like to me:

MasterChef: Gordon's notably more lenient because they don't traditionally work in the culinary field, and he's helping them get to that level. (I've never watched MasterChef myself, but that's what it sounds like).

Kitchen Nightmares: He has higher standards and is a bit more stern, but these restaurants are not 5-star, if the people he's helping are willing to listen to him, he will be understanding.

Hell's Kitchen: The contestants are supposed to already be proffesional-grade chefs, so he expects the absolute best and treats it like the real deal every night; because it is.

I can really see where Gordon comes from here.
I work in IT support - and I do get very *very* pissed off over the phone very quick if I'm talking to an "IT Manager" or another "network engineer" and I find out they don't know their basic stuff.
On the other hand, I've been known to spend 30 minutes very patiently talking a beauty therapist through restarting her router.
You can't expect a non-professional to be perfect in something they aren't trained in.
But if you tell me you work in the industry and are charging someone for your services you better know your stuff.

Not into Hell's Kitchen, but I always liked Kitchen Nightmares and his hotel rescue show, because he was more human, and you got to see his lighter side, and his caring side.

Ramsey is at his best when he's helping people save their businesses, I mean, the guy has a real heart and only loses it with those people if they are delusional and/or lazy and tyrannical with staff, and if someone is really down, he doesn't kick them any harder, he just sits them down and calmly talks to them about what their issues are and how he can help out. And he generally seems to take joy from watching the businesses improve and the owners get their lives back.

The REAL reason qhy Gordon is meaner in HK is because they run dinner service and are feeding customers.

He does not fuck around with standards when it comes to serving food to ppl. Notice in Master Chef, he gets the same exact way when they do team challenges and serve people.
