How to make Shibuya Toast | Japan

Crispy perfectly baked bread served with a sticky toffee sauce. It is one of my favourite desserts I had in Japan. Watch me attempt my take on the classic sweet treat.

Recipe:

Bread loaf

345 g Strong flour (bread flour)
138 g Milk
6 g Salt
30 g Sugar
7 g Yeast
1 egg + 1 egg yolk
35 g Butter

Tangzhong
23 g Strong flour
30 g Water
70 g Milk

Method

1- Combine dry ingredients into the stand mixer.
2- Turn the stand mixer on low and gently stir in the milk and eggs.
3- Over low heat combine all Tangzhong ingredients in a medium pan for 2-3 minutes until a paste forms.
4- Place Tangzhong mixture into the stand mixer and combine for 2 minutes.
5- Place small knobs of butter into the dough until it is all combined.
6- Combine into a small ball and let rest for 30-45 minutes or until doubled in size.
7- Press out air in the dough and proceed to roll it into a loaf.
8- Place loaf into a bread tin and let rest for another 30 minutes.
9- Bake at 180°C or 345°F for 35-40 minutes.

Sticky Toffee Sauce

175 g Demerara sugar
170 g Butter
500 g Double cream
25 g Golden syrup
25 g Treacle
1/2-1 Tbsp cornflour + water

Method

1- Combine all ingredients in a small saucepan.
2- Heat for 4-5 minutes until sugar is fully dissolved (do not let it bubble).
3- Add cornflour until desired texture is reached.

Milk Icecream

240 g milk
250 g of condensed milk (add more if you want it sweeter)
240 g Full fat cream
40 g Milk powder
1/4 Tbsp gelatin

Method

1- Combine all liquid ingredients into a large bowl.
2- Whisk the milk powder followed by the gelatin until it has homogenised.
3- Place into your icecream maker according to your machine's instructions.
4- Place into freezer for a minimum of 4 hours.

To Finish

Method

1- Slice loaf in half and cut out the centre.
2- Cut centre bread into cubes.
3- Toast bread in oven at 180°C for 10 minutes until golden brown.
4- Combine sauce, ice cream and bananas inside the bread loaf.
5- Serve with more sauce.
6- extra sauce.

Thanks BlueBook!!! Now my kids want ice cream and toffee on their toast for breakfast. They don't believe that toast can be dessert.
