Fried Blue Horse Mackerel with Garlic Wine Sauce | Traditional Azorean Recipe

Fresh, crispy, and packed with garlicky goodness! This traditional dish from the Azores islands of Portugal—Chicharros Embogados or Chicharros com Molho Cru—is pure comfort food with bold flavors. Warning: not first-date approved! 😉

In this video, I’ll show you how to prepare perfectly fried Blue Horse Mackerel (or Stickleback) and smother it in an incredible garlic and wine sauce. It’s a dish I grew up with, and I can’t wait to share it with you!

Ingredients:
For the fish:
• 3.3 lbs (1.5 kg) Blue Horse Mackerel or Stickleback (cleaned and trimmed)
• ½ tbsp coarse sea salt
• 1 cup white corn flour
• ¾ cup pork lard (or substitute with your preferred fat)

For the sauce:
• 5 garlic cloves, minced
• ½ cup parsley, chopped
• ¼ tsp cinnamon
• ¼ tsp ground cumin
• ½ tsp fine salt
• 3 tbsp tomato paste
• ¼ cup white wine vinegar
• 2 tbsp sweet pimento paste
• ½ cup water

Coat the fish, fry it to crispy perfection, and drizzle with the irresistible garlic-wine sauce! 🤤
