Vegan Black Eyed Peas Recipe

Hey #VeggieFam 🌱! It's Sunday, so you already know I have a recipe for you.
Since it's the last day of Black History Month, I wanted to share a recipe that is perfect for our traditional Sunday Dinners. It's a vegan version to Black Eyed Peas!

Ingredients
• 4 cups of Vegetable Broth
• 2 tbsps of Garlic Powder
• 2 tbsps of Onion Powder
• 1 tsp of Ground Black Pepper
• 1 tsp of Salt
• 5 drops of Liquid Smoke (Mesquite)
• Cayenne Pepper to taste
• 1 Dried Chili to taste
Directions
1. To begin, grab your bag of dry Black-eyed peas and 2 cups of Cold Water.
2. In a bowl, pour your peas in and cover with the water.
Allow your them to soak overnight. You can cover with a paper towel.
3. The next day, drain off any excess water and rinse off the black-eyed peas again.
4. In a large pot, pour in your peas and vegetable broth.
Stir in your Garlic Powder, Ground Black Pepper, Onion Powder, and Salt. The Cayenne Pepper is optional depending on your heat preference. Turn to high heat and bring to a boil.
5. As the peas begin to boil, add in your Liquid Smoke and Dry Chili. Then cover with your lid vented to prevent bubble over.
Turn heat down to low.
6. Allow the peas to simmer for about 45 minutes to 1 hour.
7. Enjoy!
