Tip number #1 from a local: never, ever, eat paella from a restaurant if you see a sign on the street with pics of paella dishes (you will see it everywhere). Those paellas are frozen, industrialised, and taste NOTHING like the real deal. Paella is also expensive and takes time to cook so if you see deals for 15/20e you know it’s not real. Any real paella will cost you easily 50+ euros, and they are never served as individual portions.

I adore the tortilla. That was a regular thing on long rides around Spain, France and Italy... it was easy for my mom to make, and it made great food to shut me up when I got on her nerves. lol (Those, and Kinder eggs..)

These are all very good, but as usual, the food from the North isn't mentioned and it's the best food in Spain. At the very least add 'Pulpo a la gallega' and 'Almejas en salsa verde' to those.

All of them looks delicious!!! Paella with glazed rice crust at the bottom of the pan sounds fantastic. We have similar dish called dol-sot-bibimbap in Korea, a hot stone pot rice dish with variety vegetables and meat.

Im spanish and for me the true "national dish" is the Tortilla, maybe the Paella is the most know around the world but here is considered a regional food (from Valencia) but the tortilla feels like it doesn't belong anywhere in particular.
