A visit to Takagaki No Sushi (One Michelin Star) to have Sushi Omakase and a few glasses of Japanese Sake. The Michelin Guide writes: Hanging on an old house on a Ningyocho alley is the unobtrusive shop curtain for Takagaki No Sushi. This is what the many Edomae sushi places here often used to look like. Customers sit shoulder to shoulder at the cramped, six-seat counter. Each sushi piece is composed of vinegared rice, enlivened by a little salt, with a properly aged topping. Chef Nobuhide Takagaki is a man of few words, letting his sushi do the talking. Takagaki No Sushi is popular with connoisseurs.

The boss has fantastic technique. He makes sushi like he's playing a harp. In addition, he remembers orders precisely. But I also admired the assistant who constantly observed the boss's technique carefully, took care of the guests' alcohol and acted as if he was not there. Such a work culture and respect for the superior are unavailable anywhere in the world. That's why it is said that Japan is not a country, but a state of mind. Thank you for a great trip.

Another wonderful video, absolutely hypnotic. I love the sounds as much as the visuals - it’s a real privilege to be able to immerse oneself in the environment of such a great culinary scene, where so many other YouTubers would impose with music, narration, or voiceovers.

There are some things presented here that if I saw them in their natural habitat they’d freak me out. But when a bald man cuts them up they suddenly become “food I would eat.” I don’t know why I would implicitly trust him but there you go…
