We are making Dashi today!

Dashijiru (出し汁) is a Japanese soup stock that is the backbone of many Japanese dishes.

Ingredients:

Kombu
Dried Shiitake Mushrooms 🍄
Bonito Flakes
Filtered Water 💧

Instruction:

Put 4 Shiitake Mushrooms and 10g of Kombu into a pot with 1.5 liters of water.

I rested it overnight in the fridge but you do not need to.

Can soak in cold water for as short as 10 mins

Remove the shiitake mushrooms
Heat the pot right before boiling remove the kombu so it doesn’t get too slimy.

Add in 20g of Bonito flakes at low heat and simmer for 15 mins before removing the Bonito flakes.

Filter out the excess bits of ingredients to get this RICH umami flavor, Dashi Stock!!!

Use it in soup, noodles, udon, and many other Japanese cuisines. IT MAKES A DIFFERENCE!!!!

Squeezing the katsuobushi make the broth a bit bitter actually. Wouldn't recommend
