That's how I make my cheese, but I ad a good handful of diced chives or green onions along with the lemon and salt. It's absolutely delicious on a crusty day old bread.

In Turkey, this is what we do with milk which of freshness we are not sure of. We mostly use vinegar instead of lemon.

we call it " chana" in Bangladesh🇧🇩
But its not considered as cheese here.we use this to make sweets, such as "rushgulla". 💕

That's how we still make it. You can use any acid for rennet, such as vinegar or fresh nettles. I know it as farmer's cheese.

Except I use fermented milk, e.g. buttermilk, which does away the need for added acid (take some live culture and add to your pasteurized - not super pasteurize -cover and wait for it to thicken), then gently heat it to slightly warmer than hand temoerature until it curdles. Drain and THEN add salt, herbs, smokey flavour or sugar and lemon juice/fruit puree if you are using it for a cheesecake.

This is similar to paneer in Indian food. I don't put salt in. The paneer is a bit harder because we drain longer.

It’s pretty common here in italy, it’s called “ricotta” that means cooked another time (don’t ask why)

You can also take heavy whipping cream put it in a sealed container and shake the hell out of it for about 10 minutes and you'll have butter, you're welcome

I've basically made that by accident by trying to make buttermilk with cream. So, I guess I made Roman cheese biscuits. 😅

Never tried lemons. I've used pineapple juice with chillies and salt, same process but after it's dried for a few hours I put it in a ziploc bag and sort of kneed it for about 5 minutes then spread it in a small pan with plastic over it and put it in the fridge overnight.

Creamy sweet and spicy cheese, great for crackers.

As long as it's sufficiently acidic, it'll work.
