I will have to try the lemon juice, it seems like it would be a nice flavor enhancer. I usually use hazelnuts or walnuts in my pesto for more flavor, and sometimes add watercress for a peppery zest.

I'm no pesto pro but toasting the pine nuts first brings out more of their oils. Also running the pine nuts in the food processor dry first lets them get more evenly crumbled.Adding 1-2 tablespoon of nutritional yeast will really give a nice cheesy flavor, more like traditional non vegan pesto.

My vegan pesto is the same recipe, except I add an entire avocado and some nutritional yeast to the mix.
