You're "tempering" the eggs so that they don't scramble when you add them to the hot ass milk. You slowly add tiny bits of the hot milk to gently raise the temperature of the eggs (so they don't actually *cook*). Then you slowly wisk that shit back into the other half of the milk that's still in the pan, to basically do the same thing. The goal is to not scramble the eggs. Because that would be nasty as shit in some hot milk.
