Chicken Quesadilla recipe:

Tortilla:

Maida - 1 ½ Cups
Salt - ½ tsp
Baking Powder - 1 tsp
Butter - 2 tbsp
Hot Water - ¾ Cup

Spice Mix:

Red Chilli Powder - ½ tsp
Paprika Powder (optional) - 1 tsp
Salt - ½ tsp
Black Pepper Powder - ¼ tsp
Cumin Powder - 1 tsp
Dried Oregano - ½ tsp
Garlic Powder (optional) - ¼ tsp
Onion Powder (optional) - ¼ tsp

Other Ingredients:

Chicken Breast - 2 nos
Lemon Juice - 2 tbsp
Oil -1 tbsp + 1 tbsp + 2 tbsp
Garlic (chopped) - 1 tbsp
Onion (sliced) - 1 Cup
Capsicum (sliced) - ¾ Cup
Salt - ¼ tsp
Cheese -¼ Cup (per Quesadilla)

Cooking Instructions:

1. To make the tortilla, combine the flour, salt and baking powder together. Add the butter and mix it into the flour. Add the warm water a little at a time. Knead it for approximately 5-10 minutes or until you get a smooth dough. Cover and rest for 20 minutes.

2. Knead again for 1 minute. Divide the dough into 4 portions. Roll out each portion into a very thin disc. Cook over medium heat until golden spots begin to appear on both sides.

3. Keep the tortillas covered in a cloth.

4. Combine all the ingredients for the spice mix together.

5. Cut the chicken into half to make two thinner pieces. Add lemon juice and olive oil to them. Add the spice mix and coat completely.

6. Add oil to a pan and cook the chicken over medium heat for 8-10 minutes or until completely cooked. Cut the chicken into dices.

7. Remove the chicken from the pan and add onion, garlic and capsicum. Season with salt and saute on high heat for 3 minutes.

8. To assemble the quesadillas, spread cheese on the tortilla. Spread some of the onion mixture and the chicken on one half. Fold the tortilla in half.

9. In a pan, heat the oil and pan-fry the quesadillas on medium heat until they turn crisp and the cheese has melted.
