Sambal Prawns / Malaysian Style recipe in English / Sweet and Sour / Prawn Peratal in Chilli paste

This is a famous Malaysian delicacy. All the three cultures have their own versions. My version uses fresh ground dried chilli with a mix of Southeast Asian aromatic herbs like lemon grass and pandan leaves ( screwpine leaf ) Both can be easily grown in your backyard.
Recipe :
To make the Chilli Paste -
Dried Chillies - 20gms soaked in hot water
Small onion (shallot) - 2 cut into small pieces
Big Onion - 1/4 cubed
Garlic- 2
Tomato - 1/2
Lemon Grass - a small piece
Oil - 1 tbsp
Turmeric extract - 4 tbsp
Grind the above in the blender to a smooth paste.
Other Ingredients :
Prawns ( shelled and deveined ) - 200gms
Big Onions - 2 chopped lengthwise
Garlic - 5 crushed
Pandan Leaves (screwpine leaf) - 2 - 3 tied
Tomato - 1/2 chopped
Curry Leaves
Lemon Juice - 1 tbsp
Oil - 3 tbsp
Salt to taste
Sugar- 1/2 tsp ( option )
1. Saut'e the prawns with 1 tbsp of oil in a pan until it turns light pinkish. Set it aside.
2. Heat the pan and add 2 tbsp oil , add in the pandan leaves (2-3), stir it for a while , then add in the crushed garlic, stir until aroma comes out.
3. Add in the chilli paste and stir it for a while until it starts to thicken, then add in the tomatoes and let it simmer until oil floats.
4. Add in the onions, curry leaves , stir for about 5 mins. Add 1/2 tbsp oil if it is too dry.
5.Last add in the prawns which is set aside, stir it nicely until it is well combined. Add in the lemon juice .
6. It's an option to add sugar 1/2 tsp.
7. Salt to taste
VOILA !! Now you have the famous Prawn Sambal. Enjoy and put your comments . If you like it , will apreciate your thumbsup.
