LENTIL STEW RECIPE:
1 sweet potato, peeled & cubed
1/2 a red onion, diced
2 stalks celery
1 large carrot
3 tablespoons curry paste
3/4 cup lentils
1 can full fat coconut milk
26 oz bone broth
Cinnamon stick, cardamom pod, star anise(optional)
1 cup frozen cauliflower rice
Lime juice
Salt & pepper
Ghee
Preheat a large dutch oven over medium heat with 2 tablespoons of ghee. Add sweet potatoes, onion, celery, carrots, 1/2 teaspoon salt, and a few cracks of pepper. Cook for 15 minutes then add curry paste, cook for 3 minutes, then add lentils, coconut milk, bone broth, 1/2 teaspoon salt, and the tea pouch of cinnamon, star anise, and cardamom.
Bring to a boil, reduce to a simmer, put lid on and cook for 25 minutes. Add 1 cup of cauliflower rice and turn the heat off. Let the pot sit for 5 minutes then check for seasoning and add a squeeze of lime juice.
