You’d think with a name like Florida Salads, there might not be any sandwich recipes in there let alone one that’s tasty. Yet here we are with the Salmon Sandwich from that very cookbook. Go figure. Now, you may be tempted to say unequivocally that I should have use canned salmon but most recipes, even old ones, call for canned salmon when they want it. This did not so I went with just cooked salmon. Canned salmon would’ve been good too though.

Make the Salmon Sandwich yourself! Well, given there were no amounts given, there’s not really any point in posting the recipe. Adjust the amount of salmon, olives, celery, and mayonnaise to your taste.

my grandma (born in 1891) used to make this with capers instead of olives, and she had it on toast

Japanese barbecue sauce was not even in her power to imagine, but I am going to get some and try this in the plussed-up version

Leftover salmon is my favourite sandwich. Every summer I visit my family on Vancouver Island, and endless salmon dinners are a thing... the day after, slightly hungover, straight out of the fridge leftover Sockeye, mayo, some capers, toasted sourdough... maybe some cukes or iceberg for some greenery... forget it, you can call it my electric chair meal right now. Best variation is spot prawns tossed through a similar remoulade-style dressing. Whatever you've got. Perfection.

I was concerned that the Bachan's Hot and Spicy Japanese Barbecue Sauce would overpower the flavors of the sandwich, but I'm glad it didn't.

Salmon salad rules, but I gotta suggest something that my late grandmother made with salmon she used to can at home: Salmon patties.
You get yourself some cooked salmon -- it can be canned, leftovers from last night, or freshly-cooked. Just make sure to remove the bones. Add some crumbled saltines or breadcrumbs as a binder and an egg or two. Mix it all together. You *can* add in herbs like parsley or dill, whatever you fancy. But at the end of it, the fish mixture needs to hold a patty-like shape. Shape it into discs and put it on a skillet with a bit of oil. Fry it on both sides until it firms up.
I like it on a plain potato roll with some tartar sauce, but add what you like. Could do cheese, could do cocktail sauce, bourbon-molasses glaze, whatever.

Love your channel! It has definitely helped me to kick up my sandwich making game. My mom used to make "salmon salad sandwiches" which were just like this except she mixed the chopped lettuce in with everything else, and added onion and a good amount of black pepper. They were simple but delicious.

If you don't have the fancy BBQ sauce, even some salt, pepper, and lemon zest would be a classic way to plus this up. I might try some za'atar if I wanted to be more international.

I got a plus-up for this: Balsamic vinegar, red onion, and a little sprinkle of zaatar. This combo with salmon changed my life (based on a bagel shop near me that does a smoked salmon bagel with those three and a drizzle of EVOO). Too many things?

White bread and iceberg lettuce - yow.

Recommendations

Place the broiled salmon on a paper towel to better drain the fish. If there's leftover the remaining will become soggy.
Add fresh dill to make more favorable, remove olives.
Use fresh rye or. Ultigrain for flavor and textures.
