The remake is probably the way Vivi remembers it because she didn’t see all that with them lowering their sleeves, she saw a flash of light when she looked up and then them showing their crosses

It doesn't matter how crisp everything looks, for me the og gave more emotion, that can be said about a lot of things tho in older one piece, for an example in the arlong part arc the og had luffy kind of push down Nami's head when he placed his hat on her head while the remake had it more of a Throw. Just the smallest things can really make a difference and that's why I get mad when I see the remakes because they traded the feeling and raw emotion for better looking shots.
