Seriously, I don't expect people to go through my ancestors' plight to be allowed to enjoy gumbo or crawfish (I didn't, why should you?). The only thing you need to understand is how to cook the stuff properly. Educating yourself on South Louisiana history makes you historically literate, but it doesn't help you become a good cook.
