PEANUT BUTTER ICE CREAM
Today I'm going to show you how to make peanut butter ice cream without heavy cream.
This healthy peanut butter ice cream is so smooth and creamy, and it requires no ice-cream machine.
It's made with natural and nutritious ingredients.

PEANUT BUTTER ICE CREAM RECIPE
(makes 8 servings)
Ingredients:
1 cup coconut milk (240ml)
1 cup oat slurry (240ml) (see details in the video)
1/2 cup date paste (150g)
3/4 cup unsweetened peanut butter (180g)
1/2 tsp salt
2 tsp vanilla extract
NUTRITIONAL INFO (per serving):
275 calories, fat 19.2g, carb 22.3g, protein 7.9g
Preparation:
For oat slurry, combine oats and milk and let it soak for 2 hours. Strain the mixture through the sieve, pressing with the back of the spoon.
Let it simmer for 3-4 minutes over medium heat, until it thickens. Let it cool.
In a bowl, add coconut milk, oat slurry, peanut butter, sweet date paste, salt and vanilla extract.
Mix everything together with a mixer for 1 minute.
Cover and place in the freezer for 3 hours, stirring the mixture every 30-45 minutes, or until it freezes to desired consistency.
Serve with chopped peanut butter and drizzle of melted dark chocolate.
