Classic Strawberry Fraisier Cake Recipe | Desserts with Violetta
This Classic Strawberry Fraisier Cake is a traditional and sophisticated French delicacy. Made with flavorful and delicate almond genoise sponge cake that is soaked in sweet cherry brandy syrup, heavenly light and airy creme mousseline, loads of fresh summer strawberries, and tinted almond paste. This is a French strawberry cake that will have you instantly fall in love!

INGREDIENTS:
Creme Mousseline:
- 600ml (2 ½ cups) whole milk
- 4 Tbsp Kirsch (Kirschwasser or cherry brandy) (may be omitted or substituted with regular brandy)
- 1 Tbsp vanilla paste (or 1 vanilla pod) (vanilla extract is ok, but not preferred)
- 3 eggs + 2 yolks
- 150g (¾ cup) sugar
- 50g (~½ cup) cornstarch
- 455g (4 sticks) butter (room temperature)
- 50g (½ cup) powdered sugar
Almond Genoise Cake:
- 3 eggs + 2 egg whites
- 75g (¾ cup) powdered sugar
- 75g (½ cup) flour
- 50g (½ cup) almond flour
Syrup:
- 50g (¼ cup) sugar
- 100ml (⅖ cup) water
- 3 Tbsp Kirsch (Kirschwasser or cherry brandy) (may be omitted or substituted with regular brandy)
Assembly:
- 10-12 large hulled strawberries (~485g or 17oz)
- 12 medium hulled strawberries (~350g or 12oz)
- 4-6 strawberries for decoration (sliced in half)
- 150g (5.3oz) marzipan (for the top)
- 50g (1.8oz) marzipan (for the flower decorations)
- pink + red food coloring
- 15g (1 Tbsp) melted cocoa butter (or coconut oil)
PAN SIZE: 8 inch round pan
