Hello :) Halloumi pies, halloumi bourekia, whatever you want to call them, are absolutely delicious. Traditionally these would be smaller and would be fried. But I’m not a fan of deep frying. So I made a kourou style pastry and baked them in the oven.
They are so delicious.

Apologies for the shadow of my head keep bobbing up and down in the video! I need to work on that!

Makes about 10

Ingredients

Kourou Pastry:
500g plain flour
1 tsp baking powder
1 tsp white wine vinegar
1 egg
1 cup light olive oil
1 cup greek yoghurt

Filling:
450g halloumi grated coarsely
2 tsp dried mint
2 eggs

Egg wash and sesame seeds

Just made these with my daughter. Having a Cypriot cooking week as not been for 2 years due to covid. Your recipe is perfect. Love them. The olive bread was delicious too. Many thanks. Wish i knew how to put a photo on to show you.

Very very very nice, i love them, you need only one hour to make them . The trick for the filing is to use 1 tbsp of semolina.
