RECIPE:

Filet a few chicken breasts, cover with plastic and pound flatter if needed.

For the blackening spice, combine:

1 tbsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp of dried herbs
¼ tsp cayenne
½ tsp cracked black pepper
1 tsp kosher salt

Coat chicken in spices, sear in oiled pan for 3-4 mins per side, remove chicken and clean out pan before making sauce.

For alfredo sauce:

Add 1 cup (230g) heavy cream and 3 tbsp (45g) butter to saucepan, simmer reduce until thick. Then kill heat, add 1/2 cup (115g) heavy cream and 2 oz (60g) of grated Parmesan. Add a little reserved pasta water to emulsify sauce, then dice chicken and add to pasta.
