Very well pointed out! That heat is higher than that required for chicken to cook!Most ppl add wine to simmering veggies with pasta and forget to share that its cooked with alcohol, which creates double trouble for people who abstain.

But just to add, if any of your guests doesn't drink (for whatever reason), do let them know that it was cooked with alcohol so they have the choice whether to eat it or not. That's just being a good host! 😁

It need time to evaporate the alcohol nearly completely. Pure alcohol would need around 3 hours in kitchen conditions. If you put wine in a sauce, after 30 Minute around 35% of the alcohol is left. So you should have this in mind if you cook for children and pregnant women. For the rest, it's not important whether you eat a little bit of sauce with 2.5%, 1% or 0%, you will not get drunk.
