I usually freeball recipes, so here is a rough recipe for an all purpose "Chinese Sauce" to use on chicken, beef, veggies.
You can sub any of the spices with whatever you like, i think these flavors are $$$

"Master Sauce"
2 cups soy sauce (kikkoman)
1 cup oyster sauce
1/2c sugar
1/2c vinegar
1/4c Shaoxing wine
cornstarch slurry to thicken

Green Bean Spices:
1tbs fennel seeds
1tbs green sichuan peppercorns (they have much more flavor and aren't as tingly)

1-2 tsp red sichuan peppercorns
2-4 star anise (could use 5 spice here too)
optional chilis

- toast your spices and grind it up (you can leave the star anise whole and just pluck em out)
- combine with sugar, vinegar, wine and bring to a boil
- add soy, oyster sauce - bring to boil - thicken with cornstarch slurry
- you want the final product to be pretty dang thick so it coats the veggies



this is honestly great without garlic/black pepper - but add em if you like (:

Absolutely agree. There’s a reason they’re always open. Even on their own holidays. They got a money making business that is unmatched. I’ve never met a single person who doesn’t love at least 1 Chinese American dish

Makes sense. Chinese-American restaurants cater to American obesity habits. Massive portions, a lot of fried stuff, sweet sauces. Very carb heavy. So you’ll see old Chinese restaurants open even in rural-ish areas.

So true. Chinese American cuisine gets a bad rap because it’s not “””authentic”””; first off that’s wrong, secondly, who cares? The best foods come from when cultures meet and collaborate: Tex-Mex, Korean Tacos, and so on. Even the classics aren’t “””authentic””” if you go back far enough: Italian food before 1500 had no tomatoes!

I have the same lodge skillet. Love their stuff. Nice green bean recipe, I generally just do soy sauce, hot oil chili crisp, black soybean sauce, garlic, ginger, sesame seeds, a little cooking wine/sake/mirin/white wine/vermouth, and toasted sesame oil.

As a Chinese guy, I agree. It’s a guilty pleasure to eat this kinda food. At home we have the authentic stuff but I work at a Chinese restaurant and learn how to cook my own King Kong express kinda foods.
