You can always spray the stale croissant with some water to make it slightly damp and not wet and the put it in the oven for about 5mins and it'll be lovely and flaky again. The same method works on baguettes

Im french and i often use old croissant to make food. My mom would get cheap ones and bake them with stuffing inside (ham, cheese, vegetables, , , ) They were always so soft and delicious. I recommend !

In Miami, many Cuban bakeries do something similar to this. The sweet croissants are cut in half, they add swiss cheese and ham and then press it in a panini press. It's good salty and sweet combination
