The wine sausage is the best sausage I ever made. I use my homemade wine. I have all my co-workers wanting me to make it for them. I also get the seal of approval from my wife’s Greek side of the family for both of these recipes.

I was served orange-flavored pork sausage on a visit to Greece decades ago, and I've been searching for it ever since. I'd begun to think I only imagined that wonderful sausage. Now I know it does exist, and even better, I can make it myself! Thanks for the recipe and demonstration.

Both sausage fillings look very appetizing, but I sure am most curious about the wine sausage!
By the way, the motor on that meat grinder is insane, turning that monster on probably dimmed the lights across the street.

What is the process you use to finish them before you freeze or use fresh? Do you smoke them? Do they rest in the fridge for a period of time before you use or freeze? Do you vacuum seal or can freezer bags work?
