Latino cooks and food workers are the backbone of Philadelphia's restaurant industry - as in so many cities.

Last spring, with undocumented workers in mind, Philadelphia chef Ana Caballero launched Proyecto Tamal to support many who had lost their jobs due to the pandemic. Many of these cooks were unable to access any government aid.

For over a year Proyecto Tamal coordinated weekly tamale sales - and the tamales sold out every time. They raised over $80,000 for over 70 Latino cooks in the area.
