As a small market grower, an absolute must is harvesting before first light. The bitter sap in the leaves sink down into the roots at night then rises with the sun. Big difference in taste. Sweet vs bitter.

Winter is the best time for growing lettuce is winter here in Tucson Arizona. If you plant lettuce seeds in late Aug or early Sept. you will have greens up until March, or whenever we start getting hot again.

Black Seeded Simpson is what I’ve been growing for years with great success. As you said it’s a great crop to grow if you’re a beginner!

I get so many free lettuce seeds, that I don't know what to do with all of them, so I put them all in a jar, and shake it to mix the seeds, bronze leaf, Merlot, Cimarron, butter crunch, May Queen, Romain, Black Seeded Simpson, and more. In the fall, I sprinkle seeds into the garden beds, and water them in. In the winter, I do seed starts and transplant. I harvest whatever comes up. It is always a surprise. Last winter, it was mainly Romain and Black Seeded Simpson, this fall a mix of everything except for Romain. I've eaten a little more than half of the lettuce, and will finish harvesting before winter sets in, Alabama zone 7B.

Winter is the best time to grow lettuce ( and kale, spinach, cilantro and a lot of other cool weather crops. Where we live it’s necessary to protect it in a cold frame or low tunnel. I live in zone 7a so it does get cold. I use ceiling fan light covers- the ones that is shaped like a trumpet bell, to cover seedlings in the fall, winter and early spring.

I prefer leaf lettuces. I used to grow marvel of 4 seasons, buttercrunch and black seeded simpson. Recently, I've had trouble getting buttercrunch to germinate and my simpson lettuce seems to go straight to bolt (spring or fall). My new favorite from this year is red fire. Tender, delicious, slow to bolt and not bitter when it does, cold hardy (especially with a little protection).

The perfect example instead of thinning and wasting a plant - is succesive harvesting. Cut off a leaf its time consuming - but so is microgreens - which this is my method !!!). You have saved all of the plants, that will continue to make further leaves for the future salads. The bigger the young plant leaves, the more salad greens (for humans and Daisy !) to chow on. You don't waste plants, always have more than emough greens, and a perfectly growing garden - with 100% use and no abuse.

I’ll eat any homegrown lettuce, but ‘FORELLENSCHLUSS’ from Baker Creek, a basic cos-type, and the butter/Bibb styles are my favorite.
