Raspberry Chia Pudding

Ingredients:

• 1/2 cup chia seeds

• 2 cup milk of choice (almond, coconut, oat, etc.)

• 1/2 cup frozen raspberries (blended or mashed)

• 1 tbsp maple syrup or agave syrup (adjust to taste)

• 1/2 tsp vanilla extract (optional)

• Toppings: coconut flakes, fresh or dried raspberries, frozen crushed raspberries (looks like pomegranate in picture)

Instructions:

1. Blend the frozen raspberries, milk and syrup.

2. Pour into a bowl or jar, mix the chia seeds and mix well.

3. Cover and refrigerate for at least 2-3 hours (or overnight) until the chia seeds absorb the liquid and thicken.

4. Once set, pour into desired serving dish and top with coconut flakes, fresh raspberries, and frozen crush raspberry if desired.

5. Enjoy chilled!
