This dramatically increases the surface area of the ice cube which allows it to rapidly cool the liquid in contact with it. The trade off is that it melts faster and thus diluted the liquid it is cooling. The opposite end of the spectrum is the sphere, which has the minimum possible surface area for any given volume. This means it melts more slowly and doesn’t dilute the drink as much, but it also cools the drink slower as well. Geometry and physics applied in everyday life.
