Great video and great technique!   My wife LOVES THIS so much.  After making this for the first time it's become a staple of our home.  I have to make it once at least every other week if not every week.

This looks amazing and I like the steps involved (i.e., covering the pan so it doesn't splatter, etc.).  My husband and I are making this as our 1st meal of 2014! We've added a little red and green peppers into your recipe. It's cooking now so I'm keeping an eye on your video to insure that my patatas y cevollas :-) cook down and look like yours.  I'm sure it will come out amazing! THANK YOU for posting! Julia

This is perfect.  If you your tortilla is to oily or runny you've not cooked it correctly.  For the record, olive oil is good for you.

Im Mexican and my family does something similar to this except the eggs are scrambled and we add patatas, jalapenos and onion. This looks so delicious, im going to try it. Crazy how similar our foods kinda are. Gracias por la receta.


Edit: I tried it and it was good but me being Mexican I aded some salsa.

Hi, I tried it out today and it is simply delicious and easy to make. The only thing that didn't work well was flipping it over. But otherwise. Really good, I will practice and then will master it :)
