I started with the Aeroscout and it IS excellent. The Ranger, Apprentice, Aeroscout, are all great starting points. Biggest advantage of the Aeroscout is the it's hard to break a prop and most beginners, are not going to remember to have a spare unless they coached on it. Truly, you can't go wrong with any of those three as long as you have someone to coach you along the way.

One more point - Avoid the little UMX planes unless you really really don't have the room. Wind will knock the smaller planes around regardless of any stability software. Also consider what the runway where you will be flying. Bigger tires mean less trouble on grass or dirt. Tricycle gear is also better because you have direct steering with the nose wheel and don't have to worry as much about tipping the nose over. (Exceptions occur as in this video, but: the nose gear will normally help protect the prop a little.)

The second best is a UMX because it’s like crashing a leaf.

Too much wing loading and flies too fast for a beginner.
Go with something like a powered sailplane.
