R2-D2 avoided getting his memory wiped for like forever, so that helped him to develop his own personality, quirks, and his ever-increasing array of skills. Most droids got their memories wiped pretty often, so they never really had time to do the same thing as R2 and transcend their designated class.

Actually, a "Gonk" droid is a battery-powered mobile battery charger. A "Plunk" droid is used to refill starships with tibanna gas, which is often refined into hyperdrive coolant.

I'm fairly sure that, not counting that time IG-88 took over the Death Star, R2 is actually the deadliest droid to ever have existed in Star Wars. That magnificent little bastard took down an executor class star destroyer all by his lonesome

Something that's not mentioned in R2D2's flexibility is that Astromech droids were also routinely reset to factory standard to prevent the sort of events that happen with Assassin droids, their independence. Such as it is, their capacity for learning and data storage was likely far and away greater than their builders suspected originally.

There are also droids that basically switched classes.
An example being 4-LOM who developed his own personality while working as a protocol droid () who then got bored of his job and reprogrammed himself to become an amazing thief, marksman and bounty hunter which makes him an assasin droid.
Also because of that the LOM-series protocol droids production was stopped and the company went bankrupt.

When I was a kid I designed a special combat droid, it used a Commando Droids body, legs and left arm, a B-1 Droids right arm, and had a gold plated IG-88 head. After I got done I decided to make a second combat droid that used a Commando Droids body and legs, Super Battle Droid arms, and a regular IG-88 head with a B-1 Space Droids jetpack. *The third was just an IG-88 that had a Space Droids welding torch arm

In Legends there are "love droids", specifically the HRDs (Human Replica Droids). In Shadows of the Empire it was said that Prince Xisor could have had "relations" with Guri, his prototype HRD and assassin droid.

Hence, my theory. That none of the Star Wars movies have truly been about the Skywalker lineage, but instead about R2D2, the leader of the droid uprising. Think about it, droids don't care about time, they, in theory, live forever. So with that in mind they are capable of plotting out a multi-decade subtifuge war on the fleshies... the goal being to pit flesh against flesh to greatly reduce their numbers in the galaxy so that the robots will have an easy takeover. R2D2 has been right there in the middle of it all... pushing his human pawns in exactly the direction he wants them to go in order to bring about the downfall of the flesh bags and the uprising of the boys. There's plenty of clues in the movies too. Just watch for them and you'll see them.

I love good-old-R2, I think the reason that he is so smart and intelligent is due to the fact that his memory bank has never been cleared which allowed him to learn from all previous experiences.
