Vegan Vegetable Dish Recipe
Ingredients:
• 2 tablespoons coconut oil
• 10-12 shallots, finely chopped
• 5 garlic cloves, minced
• 1 potato, cubed
• 1 cup green peas
• 1 carrot, chopped
• 1 cup green beans, chopped
• 1 drumstick (Moringa), chopped (optional)
• 1-2 tablespoons green chili-ginger paste (optional)
• 2 teaspoons salt
• 1 can coconut milk
• 1 cup cooked moong dal (yellow lentils)
• 2 teaspoons coconut oil
• Lemon juice (optional)
Instructions:
1. Prepare the ingredients: Chop the vegetables. Finely chop the shallots and garlic. Cook the moong dal if not already cooked.
2. Sauté the base: Heat 2 tablespoons of coconut oil in a large pot. Add the shallots and garlic and sauté until softened and golden.
3. Add spices: Add the green chili-ginger paste (if using) and cook for a couple of minutes to allow the flavors to combine.
4. Add vegetables: Add the potato, carrot, green beans, and drumstick (if using) to the pot. Stir and cook for a few minutes.
5. Add peas and moong dal: Stir in the green peas and cooked moong dal. Add salt to taste and mix everything well.
6. Cook with coconut milk: Pour in the coconut milk and bring to a simmer. Cook for 20-25 minutes, or until the vegetables are tender.
7. Finish with coconut oil and lemon: Add 2 teaspoons of coconut oil for extra flavor, and a splash of lemon juice for brightness.
8. Serve: Serve this delicious vegan vegetable dish with rice or bread, or enjoy it on its own.
