Budae Jjigae / Spicy Sausage Stew by Chef Jia Choi

Annyeonhaseyo everyone, this is Jia. Today we’ll be making famous hot pot., Budae jjigae. Budae jjigae is a Korean American fusion stew, that is loaded with spam, sausages, ramyeon, and some veggies. Budae is a general term of a military base in Korean and jjigae means stew.

Ingredients
3 sausages, thinly slice
200g spam, slice
1/4 onion, slice
200g tofu
2 tablespoons baked beans can
1 stalk green onion, sliced
1 ramyeon(any Korena ramyeon works)
3 and a half cups water

Sauce
1 tablespoon light soy sauce
1 tablespoon gochujang
1.5 tablespoon gochugaru
1 teaspoon ramyeon soup base(from package of ramyeon)
1 pinch ground black pepper
1/2 teaspoon salt
1 tablespoon rice wine
1 teaspoon minced garlic

Instructions
1. Mince the garlic. In a small bowl, add gochugaru, salt, light soy sauce or soup soy sauce, garlic, gochujang, rice wine and gochujang. Stir it.
2. Slice tofu into big bite size pieces, about2cm thick. Slice onion and green onion.
3. Diagonally slice the sausages. Slice spam into 1.5cm thick, 4cm size
4. Arrange ingredients in 26cm pan that has at least 4cm depth. Add sauce to the pan and then pour water to it. Bring it to a boil.
5. Break ramyeon into half. Add the noodles in the middle of the pan and cook it for about 5 minutes until the noodle is cooked. Add some more water if needed.
- Ideally it’s the best when cooked at the table. If it’s not possible, bring the pan or pot when cooked and serve immediately.

Question. For my recipe, is it okay if I use European cheese instead of American? Examples of European cheeses are German Beer cheese, French Brie, Italian Mozzarella, Spanish Manchego, etc. Also, may I substitute Spam with Beef briskets?
