Budae Jjigae(Korean Army Stew)
Ingredients
* 1 cup sliced onions
* 1/4 cup sliced scallions(white portion)
* 1 can spam(sliced)
* 6-8 Korean mini sausages(cut into squid shape)
* 3/4 cup shimeji mushrooms
* 1 small bunch enoki mushrooms
* 1/2 tofu(sliced)
* 2/3 cup rice cakes
* 1 cup well-fermented kimchi
* 1/2 cup baked beans
* 1 instant ramen noodle
* 2 slices American cheese
* 2 tbsp gochujang
* 1 tbsp gochugaru
* 1 tbsp soy sauce
* 1 tbsp mirin
* 2 tsp sugar
* 5 cloves garlic(minced)
* 4 cups dashi/chicken/beef broth
* Scallions(green portion for garnish)
Instructions
1. Slice and prepare all ingredients(onions, scallions, garlic, spam, sausages, and tofu)
2. Combine gochujang, gochugaru, soy sauce, mirin, sugar, and garlic.
3. Add onions and scallions to the base of a pot and place the spam, sasuages, mushrooms, tofu, and rice cakes around the center. Add kimchi, baked beans and sauce on top.
4. Pour hot broth on top and let it come to a simmer. Once it’s at a simmer, add instant ramen noodles and American cheese.
5. Let it simmer until the noodles are cooked through, garnish with green onion, and enjoy.

Army Stew is literally the definition of a “throw whatever you have in a pot and cook it” stew. It came to existence literally because after the Korean War, Americans left so much food left behind in army bases, the locals that raided the pantries gathered things ranging from hot dogs, to baked beans, to tofu and instant noodles. Everything that was found was thrown into broth made from the instant noodle packets left behind.

It's so good. Literally anything you want in there. We've done it with Spam, rotisserie chicken and some leftover pork loin. Literally throw any meats in there and it's going to be so good.

There are many versions of the Budae Jjigae origin story. Some say Korean civilian contractors working with Americans had access to spam and beans and would bring them home. Other versions say the starving locals would go dumpster diving for scraps. And the least popular version is that actually it was the American GIs who took their own food supply and invented a fusion soup using local Korean ingredients like pepper paste/flakes, garlic, etc.

I'm enjoying my simpler version right now, without sausages, cheese nor beans. Next time I'll swap the Spam for more mushrooms.
May not be the real thing, but this is soooo delicious !
