90 Calorie Street Taco Taquitos
These macro-friendly, low calorie taquitos are perfect as an appetizer for a large group or as a meal prepped snack that you can have throughout the week. I like to pair with a simple yogurt dipping sauce (usually 2:1 ratio of fat free Greek yogurt and any hot sauce of choice + a dash of garlic/onion powder)
You could also easily just prepare half as many taquitos as I show here (I made 27) and store half the street taco chicken as a meal prep for other recipes through the week! Or - meal prep the meat, and prep these fresh 4-5 at a time, do what works best for you!
Per Taquito (makes ~27):
90 Calories
9g Protein
10g Carbs
1.5g Fat
Ingredients:
16oz diced boneless skinless chicken thighs
16oz diced chicken breast
Marinade:
80g orange juice
Juice of 2 limes
4 tblspns soy sauce
1 tablespoon minced garlic
2 tspn cumin
2 tspn onion
1 tspn paprika
2 tspn coarse salt
1 tspn black pepper
1 tablespoon adobo sauce
20g brown sugar
Dice 1 onion
Chop 1 bunch of cilantro
Add juice of 1 lime
40g fat free cheddar
40g 2% cheddar
Extra thin corn tortillas (I used 27 total)
*STEAM BEFORE ROLLING*
Add 1-2 spoonfuls of the chicken mixture to each tortilla, and roll
Bake at 420 degrees
~20 mins
