I love nut butter in cookies...two of my favorite recipes are this cashew butter bar cookie packed with dates, it's kinda like if an oatmeal cookie & a date bar had a baby, and a chocolate almond butter espresso cookie...I am realizing that I have not made peanut butter cookies and it seems like a *perfect* thing to correct during isolation 💚

I made peanut butter at home it's so easy you just need a high speed blender or a food processor and it's much better in Italy we don't have so much options and the majority have oil and sugar

Ooo I bet a pecan butter cookie would be incredible. Expensive though... Cashew butter cookies are good. I think sweets from the earth makes some.
