I water bathed canned many different fruits an salsa today I pressure canned 50qts potatoes...was easier an less scary than I thought.it was alot of fun.grandaughter helped me peel an cut an prepare jars.shes 13 an I want to teach her canningvwhich she loved an said she learned alot.

TY for a great reminder. I forgot to let a canner go for 10 mins before I put the cap on and oops, I lost half the jars. There was a temp difference which probably contributed - I was upset with myself :-( Right on the button Leisa as usual. I greatly appreciate this series.

Quick question. I water canned my first batch of home made jelly back in august. We popped the top of one today to eat and see how it is and there is a nickel sized spot of mold on the top of the jam. What did we do wrong? We popped two more to check and those were fine.

On the outside rim of ball lids I have found numbers...I assume they are batch#s. Is it?

I seem to get siphoning a lot when canning. The jars all seal and I hear the vacuum releasing when I open them so assume they are okay? I'm careful about headspace so I don't know why it happens so often.

In regards to thermal shock, could you share how you bring cold food, cold jars, cold canner (like in ugly chicken) up to temp in the canner. Do you load the canner and then start your heat on high or do you gradually increase the temp. I always worried about breaking jars when raw packing. MANY THANKS!!
