You're doing it completely wrong. Most of the nutrients are in the skin. Japanese & Chinese people eat these roots with the skin intact coz they know better. Just wash & scrub the root thoroughly. Chop it whichever way, which ever size you like. Thin shave strips preferred if you want to use it for tea (got to dry them first though)

you take out the skin, it has more nutrients than the inside. you should have scraped it lightly instead.. :)
