Tip for you guys. 🙂 If rice or fried noodles are served on a plate, you can use a fork and spoon. It's easier to eat it that way and it's what we locals do too. 🙂

Welcome to Singapore. Do remember not to put your utensils directly onto the trays next time as it isn't very hygienic. Carrot cake is made from radish and rice flour basically. Radish is literally translated as white carrot in Chinese. Hence the name of the dish is translated from chinese. There are more hawker centres that locals like to go to, for instance Old Airport Road, Chinatown Complex, Amoy food centre, Tiong Bahru, Tekka centre, Haig Road...Lau Pat Sat, Newton and Maxwell is getting touristy😄and their dishes are more expensive due to their locations.

There is no "spice" in the chicken rice. The rice is cooked with the chicken broth that was poaching the chicken in, plus some additional condiments like chicken fats, ginger, pandan leaves, shallots, garlic.. Even the chili sauce with the chicken rice they usually add chicken broth into it.

Good job for finding the vegetarian food court below the temple! There are many vegetarian options at Bugis area and some hawker centres has a vegetarian stall. Filling in the spring roll is usually mushroom, carrot, jicama, some add black fungus, water chestnut. Buddhist vegetarian do not have garlic and onion. That piece of black thing on your laksa is dried seaweed. Vegetarian laksa would be good for those who are allergic with seafood or shrimp as the usual laksa would have those ingredients. Of course the taste would be different without those distinct elements.

FYI there is a local place called Vegan Burg which is under the radar of most people as their outlet is at the East of Singapore. They even have an outlet in SF I think.

They do the same in Japan and Korea to reserve seats. I walked in a Tully's in Osaka and half the seats were empty with very expensive looking designer handbags and laptops left abandoned and coming from NYC my immediate reaction was "someone is going to steal all of these!". 🤣 I'm sure your stuff would be safe in Singapore too.

The spring rolls you had are usually stuffed with steamed turnips which are sweeter than other stuffings.

The fillings are Mexican turnip and carrot in the Popiah ( Vegetables popiah ) and dip it in chilli sauce.

My three favourite tips . Laksa at 307 Changi road Katong laksa. Chicken rice at B1-35 golden mile food centre . Prawn noodle 01-326 Tekka Centre (only Monday to Friday 7am to 1pm).

Carrot cake is a transliterationfrom Chinese 萝卜糕. In Chinese history, we've had the Asian radish or Daikon since 500BCE. That's the original 萝卜 (luo bo). Red carrots were then introduced from Europe in around 1300AD, and they were then called 胡萝卜 (hu luo bo, or "western luo bo") because they were shaped like the radishes. Radishes then got renamed to 白萝卜 (bai luo bo, or "white luo bo"). Today, unfortunately people have begun omitting the qualifier 胡 or 白 in casual speech so the word "luo bo" is now eponymous for both carrot and radish. So a transliteration of 萝卜糕 simply means carrot cake. But it is made from salt-dried radishes, yes. Also it's made with wheat flour and steamed, not rice.

Curry is more meat base, whereas laksa is seafood base where small shrimps & some spices are added to create the gravy base.
The chicken rice is not brown rice, the rice is cooked with chicken broth, ginger, pandan leaves so it changes the color of white rice.
Carrot cake is made of radish & rice flour. Radish in Chinese means the same as carrot, that is why the translation to Carrot cake. Carrot cake in Singapore local food culture definitely is not the sweet western dessert. 😊
Yes, the ice cream carts is a dying trade so eat more while they are still around. Next time you can try the cup version where the uncle will scoop a mix of different flavors into a cup. 😉

This is because Chicken Rice is suppose to pair with the soup and the sauce. Chop we leaves our bag there but thats only because its singapore and other countries u shouldnt do that. Tbh Temple food is real nice. I do eat the vegetarian food in the temple and its good.

Its sad but Ice Cream Stands are dying. Last time i use to eat them because they would past by my school in AMK. I think the 1996+ kids still manage to get those. Idk about the 2000+ ones whether they had the chance as it is really rare to find one.

I'm so glad you enjoyed some of our local dishes! For the Carrot Cake, the little 'cake' bits are actually made from steamed radish/turnip :D If you're still here, do try Nasi Padang from hajah Maimunah and some local desserts like ondeh ondeh, cendol, ice kachang, pineapple tart and more 😄

Carrot cake in Singapore has radishes, not carrots (they're similar in Mandarin since both are root veggies).

Laska is not curry noodles...

Its more of a Spicy Seafood noodles dish usually without chicken... The traditional way to eat it is with thick Rice Noodles (white color). You mix the chili by stirring the whole bowl. And as a local... without chili to add that extra spicy kick... The meal us incomplete.
