Cheesecake Mojito | No-Bake | Easy Cheesecake Recipe

Mojito cheesecake. Perfect summer dessert. It tastes like refreshing ice-cream with a light hint of lime and mint and fascinates with its uniqness.
Ingredients:
For the crust:
Shortbread biscuits - 150 g
Butter - 70 g
For the curd base:
Curd - 275 g
Icing sugar - 45 g
Lime zest - 1 tsp
Lime juice- 10 ml
Mint leaves - 5 pieces
Heavy cream (35%) - 100 ml
For the cream:
Butter - 50 g
Icing sugar - 15 g
Curd - 100 g
Instructions:
To make the crust layer, grind shortbread biscuits finely. Put melted butter to the grinded shortbread and mix it well. Take a detachable cake mold (Ø 14 cm) and cover it with parchment paper. Press the mixture into the bottom of the mold to make the sides and the base of a cheescake. Put it away in the fridge for 30 min.
To make curd base:
Beat curd cheese with icing sugar in a bowl then add chopped mint leaves, lime zest and lime juice and mix it altogether. Add cold heavy cream into the curd batter and beat it until the state of a thick cream.
Take the crust out of the fridge and put the curd filling onto it and spread it evenly. Put the cheesecake in the fridge for about 5-6 hours to stabilize.
To make cream, beat butter with icing sugar. Then add curd cheese and beat it evenly. Put the cream into the pastry bag and decorate as you wish. Bon appetit!
