How to Make Ají de Gallina, Peru's Ultimate Comfort Dish

In this episode of How to Eat in Peru, we show you how to make Ají de Gallina, a classic Peruvian dish. Last time, we bartered our way through San Pedro Market. Now, we show you how to tame the heat on ají amarillo (Peruvian yellow chili) and put together this comforting concoction of chicken, peanuts, and chili.

Cooking while traveling is a great way to get to know culture, but it comes with special challenges. We originally intended this as a plug for cooking in an Airbnb, but instead it became a bit of a comedy of errors. However, in the end, the end result was more than worth the effort.

Thanks to Marcia Del Carmen Abarca Lezama and the staff at Yola Yolita who taught me how to cook my first version of Ají de Gallina

The concept of learning to cook local dishes while traveling around the world seems like so much fun! Good job improvising with the blender!

One of my fave dishes. In San Francisco we have a restaurant that uses walnuts instead of peanuts. It’s really nice to have a slightly nutty bitter taste to cut the richness.

I shouldn't have watched this video while I'm hungry lol. I would have never thought to make a sauce that way with bread. Looks delicious. Also the shirt is a nice touch!

I love that you are cooking in an AirBnB not really knowing the blender and other equipment. Real travel life. This looks delicious!

That looks like a very tasty version of a dish I have had many times when cycling through Peru. I've never tried making it myself . Now I have to see which ingredients I can get here in Greece to give it a go!

Haha, nice use of your Airbnb's kitchen. I like the final presentation too - how you laid it all out on the plate with the potatoes and olives.

Awesome video! I love learning how to cook the local dishes when travelling - probably because I just love food and eating, and that's pretty much all my life revolves around lol. FYI Peru has the best potatoes ever! Just saying!

You would be the best dinner host!! It did look a lot like a curry towards the end, I would love to taste some of it! We always eat out when travelling but for our next trip our budget means we're going to have to cook!
