Grilled Peppers and Onions in 10 Minutes

Ingredients:
-3 bell peppers, cut to 1/4” strips
-2 yellow onions, cut to 1/8” slices
-oil for cooking
-salt and pepper to taste

Instructions:
-thoroughly dry the peppers after washing
-cut peppers and onions to desired width
-set a nonstick pan on high heat and add 3 tbs olive oil
-add the peppers in and allow to sear in a single layer for a few minutes before tossing around; try to avoid touching or mixing them during these first few minutes!
-after a few minutes, give them a quick toss and add in the onions and salt
-allow to sauté for another 3-4 minutes, tossing every minute
-add in black pepper and give a quick toss before removing from the heat

Cut the peppers into slices from the inside because the skin on peppers is very tough and will dull your knife quicker, much easier from the inside.
