It wasnt the issue with cows i think. They need way more space because grass needs more time to grow. You have to make it bigger if you want more cows.

An advice for the nether. Tunneling was also a really good choice, well done. But it is not a good idea to leave your nether portal so exposed, Before going back, get some cobblestone to build a box arround it, and connect it to your tunnel. And from there, explore the nether as if you were an ant, tunneling everywere. You can use the soulsand to locate a fortress, and eventually you can have a tunnel going directly to it and replace the floor of said tunnel to prevent spawns (in the nether mobs spawn only on netherrack and nether brick.)

The mod changes the way ghasts spawn and behave. On top of the ghasts having better accuracy (compared to vanilla 1.5.2, no idea if they got better in newer versions), the only spawn far away from the player, but then head towards him. So the longer you stay in one place, the more ghasts there will be arround, but if you kill them, you have a window of time where the nether is safe-ish. Until the new ones reach you again. A bow and arrows(good ones, not the rotten arrows from the skeletons) will really help against them.
