For your information, snappers and sea breams are recognized as different types with totally different tastes in Japan. "Tai" is a sea bream, and a snapper is "fuedai". Anyway, I'd never heard of Mr. Kimura here in Japan though he's such a legend in Canada. Big surprise and respect to him.

The only thing I was looking at was Thea, she looks so different from the finale. Her her face and eyebrows are so dark and thick.

Chef Kimura's cuts were fluid like water and precise like a surgeon, what a beautiful technique. Its a dish were there is nowhere to hide, your execution needs to be spot on.
