I am so glad I am subscribed to your channel b/c you keep me up on new vegan trends, thanks so much Dani! i live in New Zealand and we have a native sweet potato called Kumara and I have seen it called Japanese sweet potato in the US. My point is, give it a try--there are some colors that are less sweet and may make a good sub for a traditional sweet potato. I am going to make these right now=) I am from the US and Kumara have become such a staple for me and you being a SP lover I thought I would give you a heads up!

i love sweet potatoes but hate having to cut them. I usually just eat them roasted so I can avoid having to chop them up.

you should buy a heavy duty mandolin ! that will help you with the slicing / will give you even slices :)
