As a chef, I only fry with oil once. Its gotta go after that.

If youre going to save it, DONT fry cornstarch in it first, that wastes your second fry. Just strain it. But be sure to toss it after that second use.

Oil that has been heated repeatedly will begin to develop highly carcinogenic compounds that regular cleaning will not remove. Reuse your oil maybe 3 or 4 times max, and do not reuse it if you've gotten it really hot. If the oil has smoked, it's better to go broke.

Edit: These carcinogenic compounds are not noticeable by taste or smell, and due to the fact that they're carcinogenic and not straight up poisonous, you likely won't notice the effects for at least months, but probably not for years.

Edit 2: You can reuse more than 3 or 4 times, just don't reuse it if you've brought it to smoke point or if it becomes very dark.

I just pour it through a coffee filter lined sieve. No need to add anything or reheat the oil. Does the trick just fine.

There's filter paper made just for oil, they sell them online or at Daiso for like $2.80.

My mother was a Depression Era child & learned all the basic "necessities" of saving money & making food stretch. She would save up all the grease from bacon & other fatty meats & store it in the fridge. After she had saved some, she would melt it, then fry potatoes. The potatoes would absorb the flavors. She would then store the "cleaned" fat & use it in the kitchen.
Lemme tell you, those were the *best* fried potatoes *ever*!

When i worked in a resturant we would strain it through a filter that was made specifically for that purpose. We only used the oil about 3 times and then recycle it.

Awesome tip! Here's another tip: put it in a coffee filter and let it strain. I did this and was able to stretch oil 4 times. The oil was still light and was indistinguishable from the new bottle oil.
One more tip: stay just below the oil evaporation point to keep the oil from changing into a darker color.

I just strain it. When I go to fry with it again I first put a piece of white bread in to cook. It neutralizes the odor/flavor of the previous food.

Reusing oil can create free radicals that can lead to inflammation and atherosclerosis that can cause an increase in the bad cholesterol, leading to blockage in arteries.

Bro you can just strain the oil on a piece of cloth, that will stop all the tiny bits from passing through and you will have much more clean oil 👍

I use a paper coffee filter over a metal sieve and it works just fine.

If you’re gonna reuse frying oil more than twice, simply put it through a fine mesh strainer. No need for the Corn starch. Also make sure you’re using oil with a high smoke point i.e. Peanut Oil or Avocado Oil. This lessens the amount of carcinogens in your food from constant heating.

The reason you dont reuse frying oil is because after the oil has been heated and used, its not the same kind of oil anymore. Its molecular structure begins to break down and increases the amount of carcinogenic compounds in the oil. Cooking corn starch into it does not reverse those molecular changes. It only makes the oil look like its fresh oil. But its not fresh oil.

DONT DO THIS! This is horrible advice for beginner cooks!! 😅 Just strain the oil if you want to reuse it, use a small towel or cheese cloth if there’s tons of fine bits in it. But DO NOT mix water and oil together and heat it up just to strain it! Notice how milky his oil was after his “trick”?!? That’s residual water and cornstarch!! Which if heated will burn the corn starch and boil the water! Boiling water + hot oil = BAD TIME!!!
Someone is going to think they’re saving money just to go to the ER with severe burns or worse burn their house down. 😅

The best advice as an asian :

Try to use as less oil as possible everytime, like for deep frying, you can still put less oil and than fry one side at once

Yes, it takes more effort but its worth it cause the leftover oil is very less and u dont have to worry abt reusing.
Cause reusing oil is not healthy
