► Easy Sandwich Bread 🍞

600g bread flour
7g dry yeast
30g sugar
12g salt
375g milk
60g softened butter

► German Style Cooked Ham 🥩

1kg lean pork
1l water
90g salt (I used half pink curing salt and half smoked salt)
20g sugar
1 tsp fennel seeds
1 tsp caraway seeds
1 tsp coriander seeds
½ tsp black peppercorns
10 juniper berries
2 pieces star anis
2 bay leaves
1 tsp garlic powder

► Processed Cheese 🧀️

25g citric acid
40g water
33g baking soda (sodium bicarbonate)
makes at least 25g sodium citrate

In a pan, warm 200ml milk
melt 50g butter
dissolve 25g sodium citrate
add 800g shredded cheese (not too mature works best)
Stir until completely smooth, pour in parchment lined mould
Let rest for at least 6h

Increase milk by 100-200ml (for a total of 300-400ml) to get a smooth cheese sauce!xt

Andong, the reason you ruined your pan is because you dehydrated the sodium citrate too much.

Usually sodium citrate is sold as the dihydrate, which is more dissolvable in water and less like powdered cement. If you had taken the mixture off when it reduced and slowed the speed of bubbling, when it cools it'll crystallise and easily unstick from your pan.

Not impuning you or anything, just thought it'd help.

Haha, when I studied in Germany, my host mother would regularly make us Hawaii Toast. I took the idea back home and still make occasionally! Thank you for the awesome content, Andong!

I still haven't found a warm dish with pineapple (looking at you pizza & al pastor) that I loved, but I'm always down to try another! Also is this primarily a breakfast thing? Kind of reminds me of a cheap / quick Monte Cristo sandwich with preserves. Thanks for the lesson man, I love weird cultural foods like this :)

In place of candied cherries, you may try Italian mostarda cherries: they are candied in syrup with added mustard oil. Sweet and aggressively pungent. (I am currently recovering my sense of taste after a bout of Covid-19, and I guess tonight I will try mostarda!)

I'm italian and around 30 years ago I had one of those in Süd-Tyrol (or in Austria). Apparently that evening no one spoke italian, I was a kid and my parents ordered a toast for me (which in Italy means bread, cheese, ham, bread). I was kind of shocked but I appreciated the pineapple, not very much the whole thing. All of a sudden you just made me re-experience an old memory that I've almost lost. Thanks man!

I love Toast Hawaii, but I always use Raclette Cheese. Also, try the version with pears and bacon. Delicious as well. Brings back childhood memories!

I’ve been watching the Netflix show Dark, and in one of the episodes they mention Toast Hawaii. I didn’t know what it was, but then this video came out! Perfect timing.

Such nostalgia! In my family Toast Hawaii "evolved" into "toast with baked camembert and pineapple". Does anyone else know this? Toast topped with baked camembert (the kind covered in bread crumbs you can buy frozen), a slice of pineapple and cranberry jam!

In Belgium we have croque Hawaï which is like croque monsieur but with a slice of canned pineapple, I wouldn't be surprised it is a descendent of the toast Hawaï

Kudos to you; 11:15 I Wrote my thesis to become a food scientist about process cheese; and yeah that's basically how you do it.
I could pretend to give you hints on how to improve it; but honestly my specialization is more to make it… more economic. There are a lot of things, how to use less cheese and keep the same flavor/ texture profile.
But spoiler; i also prefer my toast Hawaii with real cheese. An emmentaler cheese; the nutty flavor is just wonderful. And i always spread some mustard and mayo on the bread for some more flavors. Toast Hawaii is definitely not high cuisine, but a nice comfort food.

Ich liebe Toast Hawaii. Samstag Abend bei Oma und Opa nach der Badewanne im Trainingsanzug in der Küche sitzen, es riecht nach Haarfestiger ( flüssig) von Oma, gleich kommt Wetten dass...und gleich gibt es Toast Hawaii. Das sind selige Kindheitserinnerungen.
