Uludu wade or Medu wade the orgin is stated as from india the state of karnataka, Maddur town. This is populer south indian dish also popular in Sri lanka. This is eaten mostly for morning breakfirst.

Ingredients:

1 cup urad dal
2-3 green chilies, chopped
1 inch ginger, grated
1 tsp cumin seeds
Salt, to taste
Oil, for frying
Instructions:

Rinse the urad dal in water and soak it for 3-4 hours.
Drain the water and grind the dal to a smooth and fluffy batter.
Add chopped green chilies, grated ginger, cumin seeds, and salt to the batter.
Mix well and set aside for 15-20 minutes.
Heat oil in a deep frying pan on medium heat.
Wet your hands with water and take a small amount of batter in your hand. Make a hole in the center of the batter with your thumb and shape it into a doughnut shape.
Carefully slide the vada into the hot oil and fry until golden brown on both sides.
Remove the vada from the oil and place them on a paper towel to remove any excess oil.
Repeat the process with the remaining batter.
Serve the Medu Vada hot with coconut chutney or sambar.
