Began in Hiroshima after the bomb. Favorite food of my relatives still, think soul food. My favorite is from a place in Hiroshima City called Lopez. Guatemalen style! The chef was a Guatamalan cook in Hawaii and married a Hiroshima girl who missed okonomiyake. So he researched how to make it for her. They moved to Hiroshima some years ago and he continued making it with Jalapeños and other cool stuff. So popular in Hiroshima City (known for okonomiyaki, they have entire neighborhoods dedicated to it) that Lopes is impossible to get into nowadays.
