I can’t resist sitting down with this bowl of Creamy Tomato and Mushroom Pasta Recipe and watching a great movie or game. It is just so relaxing!
Serves 2-3
Ingredients
350g/10-11oz fresh tomato roughly chopped
130g/4oz diced mushrooms
2 cloves of garlic crushed
1 small onion
1 chili diced (optional)
½ tsp of dried oregano
1 tsp of sugar
1 ½ tbs of olive oil
150ml or ½ cup of pure cream
Fresh basil or parsley for garnish
Fettuccini 250g/8oz or (any other pasta you like)
Directions
Put water on for cooking the pasta.
Place olive oil into a saucepan on a moderate heat and cook onion, garlic and chili then add sugar, salt and oregano and fry for 1-2 minutes.
Add tomatoes cook for 4-5 minutes
When water is boiling add pasta and cook until al-dente.
Add mushrooms to tomatoes and cook for another 4 minutes
Add cream and taste for salt, add more if necessary.
Serve each plate with some pasta and place a good ladle full of sauce on top, grind some pepper on top and sprinkle some fresh herbs on top. Serve immediately!
